Fat-Soluble Vitamins

Fat-soluble vitamins are carried in a fat solute and represent an important reason why athletes should not consume a diet excessively low (i.e., below 20 percent of calories) in fat. There are four fat-soluble vitamins-A, D, E, and K-And each is effectively stored to be used as needed.There are limits to the storage capacity of fat-soluble vitamins, so chronically high intakes may lead to serious disease states. To emphasize this point, the two most potentially toxic substances in human nutrition are vitamins A and D. Achieving toxic-level doses of these vitamins is difficult if consuming the usual foods, but toxic doses may be easily obtained from a regular supplemental intake of these vitamins. Generally speaking, however, our storage capacity for these vitamins eliminates the need for supplemental intake.
